Freezer Meals for your family

As a full time working mother of four kids my life is really hectic. It is all I can do to stay on top of my home, appointments, lessons, school schedules, church and of course meals! The last thing I want to do when I walk through the door after a long day at work is to cook.

What’s even worse is when my kids are texting me before I leave from work asking what is for dinner! So, I finally took the time to prepare some freezer meals and freezer short cuts to make my evenings go a lot smoother.

First off I took 10 lbs. of hamburger and cooked it all up. 5 lbs of it I browned it and added green peppers, onions and seasonings to it. Then packaged it up in quart sized bags (1 lb per bag) labeled the bags with the date / contents and put them in the freezer. The precooked hamburger can be used for sloppy joes, casseroles, soups, etc. The other 5 lbs. I browned up then added taco seasoning, salsa, peppers & onions and some seasonings. I also packaged this mixture into quart sized bags to freeze. This batch can be used for Tacos, Nachos, to put over baked potatoes or in soups.

I also had some potatos that were going to go bad if I didn’t hurry and use them so I made some twice baked potatos (including some bacon and cheese) then I individually wrapped them in Saran Wrap and then also stored them in a gallon sized zip lock with the date on them.

While I was at it I made a crock pot of Taco Soup (which I spooned into gallon sized zip lock bags) Chicken enchiladas & Chicken Stuffing casserole. I bought tins from the dollar store (you can get two tins for $1) and precooked / shredded all the chicken before putting together the casseroles. I will precook several pans of chicken in the oven then let it cool to shred or cube for later recipes. (I love shredded chicken for chicken salad sandwiches or to sprinkle on my salads)
You can also marinate raw chicken and freeze it with the marinade on it. (I love to do Teriyaki)

Freezing meals makes life so much less stressful and it is amazing how creative you can be with meals!
