Blue Goo Cupcakes
This may seem like an odd cupcake receipe but my kids LOVE them! They are fun and easy to make -I never would have thought to put jell-o in the center of a cupcake but they are yummy!

Blue Goo Cupcakes
Ingredients
- 1 package white cake mix plus ingredients to prepare mix
- Blue food coloring
- 1 package blue gelatin
- Blue Decorating icing
Instructions
- - preheat oven to 350 degrees. Line 24 standard (2 -inch) muffin cups with paper baking cups.
- - prepare cake mix according to package directions. Add 6 drops of blue food coloring to batter; adjust color as desired. Spoon batter into pepared muffin cups, filling two-thirds full. Bake according to package directions. Cool cupcakes in pans on wire racks 5 minutes. Remove to racks; cool completely.
- -Meanwhile, combine gelatin and 1⅓ cups boiling water in small bowl. Stir mixture 3 minutes or until gelatin is completely dissolved. Freeze mixture 40 minutes or until partially set stirring often.
- - Pipe ring of blue icing around edge of each cupcake. Spoon 1 rounded tablespoon gelatin mixture onto each cupcake. (I actually scooped a tiny bit of cupcake out of the center of each cupcake so the gelatin sat down in more)
- Makes 24 cupcakes
- Tip: For a firm texture, or in extreme heat, chill until serving time. For a runny "blob" consistency, serve at room temperature.
