Creamy Cucumber Casserole

I love a quick and simple recipe that uses only a few ingredients. Dinner time can be a stressful time of the day between helping kids with homework, running kids to their various activities and juggling . I am always looking for pre-package products to help make a quick and tasty meal for my family. Have you heard of all the new dressing flavors that Hidden Valley Inc. has to offer? The new flavors include: Avocado, Cucumber, Roasted Garlic, and Sweet Chili. I am excited to share a Hidden Valley Cucumber casserole recipe that we came up with using the Cucumber dressing. I really like how most casserole recipes can be simple and easy to prepare. The best part about this recipe is that it only uses 5 ingredients and if you take help from the store by purchasing prepackaged items it can be done in as little as 20 minutes!
We headed over to the local Smith’s Grocery store to purchase the Hidden Valley Cucumber dressing. It was so easy to locate down the dressing and condiments isle. All of the New Hidden Valley dressing flavors were located together on the top shelf, 1/4 of the way down the isle towards the front of the store. I also purchased a few other pre-packaged items to make my recipe very simple to make.
To make this recipe first pre-heat your oven broil setting to 500 degrees, then fill a large pot with water, place on high heat and bring the water to a boil. While you are waiting for your water to boil, slice and cook 2 chicken breasts or you can use my method of taking help from the store by purchasing a rotisserie chicken from the deli. Cut and shred the chicken to use in this recipe. If you remember you could also throw a few chicken breast in the crock pot in the morning. Next place the penne pasta in the boiling pot of water and set a timer for 10 minutes. This is really a hands off type of recipe, while the pasta was boiling I was able to help my kids with homework, clean up and start loading dishes in the dishwasher. When the ten minutes is up on the timer add in the frozen stir fry vegetables and reset the timer for 2 minutes. My family prefers the frozen sugar snap pea and broccoli variety. This recipe would be great with any frozen or fresh vegetable variety though. Feel free to change it up to your personal or families liking. When the pasta and vegetables are done boiling, remove them from the stove and strain the water from the pot.
Add in the 2 cups of cooked diced or shredded chicken to the pot (for a vegetarian version you could also leave out the chicken and it would be just as tasty). Pour the bottle of Hidden Valley Cucumber dressing into the pot. Now you may be thinking Cucumber in a casserole?? But I am here to tell you until you try it you don’t know what you are missing! Mix all ingredients together until chicken, pasta and vegetables are coated in the Hidden Valley Cucumber dressing. Transfer the pasta mixture into a 9″ x 13″ pan. Top with Mozzarella Cheese and place in the pre-heated oven for 5 minutes or until cheese melts and starts to brown. Serve while hot!
My own family were like vultures while I was trying to make this recipe. They couldn’t wait to try it! I had to tell them to back off. I had a few extra people at my house on the night I made this recipe. Total I fed 7 people and they all loved it! I even had a few servings for leftovers the next day! - 1 bottle Hidden Valley Cucumber dressing
- 1 16oz package of penne pasta
- 1 16oz package frozen stir fry vegetable mix
- 2 Cups cooked chicken shredded or diced
- 1½ Cups Shredded mozzarella cheese
- Pre-heat broiler at 500. Boil pasta according to package directions. The last 2 minutes while pasta is boiling, add frozen vegetable stir fry mix to the boiling pasta. Drain pasta and vegetables, add them back into the pot. Add shredded or diced cooked chicken, Then pour bottle of Hidden Valley Cucumber dressing over top. Mix ingredients until chicken, pasta and vegetables are coated with Hidden Valley Cucumber dressing. Transfer pasta mixture into a 9X13 glass pan. Top with mozzarella cheese and place in pre-heated broiler oven for 5min. Until cheese melts and slightly browns. Serve while hot.
