I just love spring time!!! The air gets warm with nice cool breezes. It makes me want to be outside enjoying nature and the warm sun! With all the warm sun and fun. I am always hungry for something light and refreshing! I decided to make my own version of an angel lush cake. I love tropical flavors and thought that Pina colada would be a perfect spring/summer time flavor. This cake is really simple and is done 10minutes unless you decide to make your own angle food cake. I took the help from the store to keep it fast and easy. I promise this will be a crowd pleaser!!!
The best thing about this cake is, you only need a few ingredients; and if you purchase the angle food cake its done in 10 minutes. First Mix together crushed pineapple, shredded coconut, and vanilla pudding. See my recipe below for exact measurements.
Next add in your whipped topping and gently stir in with pineapple pudding mixture. Then slice your angle food cake into 3 sections.
Lay your bottom section of cake on a plate or platter and top with 1/3 pineapple pudding mixture. Repeat this process and spread remaining pineapple pudding mixture on top of the cake.
Last of all top with fresh berries of your choice! Then enjoy the cool refreshing taste!!!
- 1 can crushed pineapple
- 1 3.5 oz. package vanilla pudding
- 1 Cup sweetened shredded coconut
- 1 Cup whip topping
- 1 angle food cake
- assortment of berries for topping
- In a large bowl mix crushed pineapple, vanilla pudding, and coconut together. Then add whipped topping and gently mix with pineapple pudding mixture. Slice pre-bought or homemade angle food cake into 3 sections. Lay bottom angle food cake section on plate or platter and top with ⅓ of pineapple pudding mixture. Then add next layer of angle food cake on top of pineapple mixture. repeat this process with last of the pineapple mixture on top of the cake. Add your choice of fresh berries. Refrigerate until ready to serve.
