Savory Eggo breakfast Casserole

It’s that time of year when the kids are ready to head back to school and parents are doing the dreaded back to school shopping!  This year I decided while I was shopping at my local  Target store with my kids that I would also stock up on Eggo® waffles and products to help our busy school mornings go a little smoother.  We headed to the frozen section of Target and found the Eggo® Waffles down the freezer breakfast isle. My kids noticed the packaging on the outside of the Eggo box that said Buy 3 participating Eggo products with Crayola packaging and get $5.00 off of Crayola products.  Since there is such a wide variety of waffle flavors we were able to pick out a nice selection of  Eggo® waffles.

While we finished up our other back to school shopping I checked out the Eggo® boxes and how the  Crayola promotion worked.  Here is what I found out: The promotion ENDS September 30th, 2016. If you Buy 3 participating Eggo® products with Crayola packaging you will get $5 off of Crayola products that you purchase. Be on the look out (during the first week of September) for your local Target circular Ad for more information regarding this promotion.  These products and promotion are available in all-stores.   I decided to redeem my $5 off of Crayola products while I was already out shopping and by doing this I would eliminate another trip back to Target.  I purchased my 3 Eggo® Waffels, I texted a picture of my recipet to eggo and waited a few moments for them to send me my virtural $5 gift card.  The kids and I went and picked out several Crayola crayons and markers then went back to the register and redeemed our Virtual gift card.

I also found the Eggo® and Crayola are currently offering a Free downloadable activity bookletI printed out a copy of the activity book for each of my kids and then decided that I would turn a few of the pages into a reusable place mat.  I selected 4 of the pages from the activity booklet and then created 2 of my own printables with math problems and other activities to help stimulate their minds.  During breakfast time my kids often turn on the TV so, I thought the reusable placemats would be a great alternative to help them think and be creative while they enjoy breakfast.

I love Eggo® waffles and how quick and easy they make breakfast. I have found now that my kids are getting a little older they want a little more for breakfast.  I decide to make a breakfast casserole using the Eggo® waffles that we stocked up on.  I knew that combining Eggo® Waffles with a few other breakfast staples would help fuel them throughout the day.  I created this Savory Eggo® breakfast casserole.

First I Pre heated my oven to 350 degrees

Then I started the recipe  by cutting an entire box of  the original Eggo® waffles into small squares. I placed the cut up Eggo® squares into a greased 9 by 13 glass baking dish.

In a bowl I mixed 8 eggs, 3/4 cup of milk, salt and pepper to taste.

Next I added 1/4 sliced green onions, 1 cup of cheddar cheese, 6 slices of pre-cooked bacon, and 1/2 cup of pre-cooked sausage to the egg mixture and mix all ingredients together.

I poured the egg mixture over the Eggo® waffle squares mixed ingredients together and topped the casserole with a few more sprinkles of cheese.

Place the Savory Eggo® casserole in the preheated oven for 25 minutes.

Serve hot and enjoy!

Ingredients
  • 1 box original Eggo waffles
  • 8 eggs
  • ¾ cup milk
  • ¼ sliced green onions
  • 1 cup cheddar cheese
  • 6 slices precooked bacon chopped
  • ½ cup precooked sausage
  • salt and pepper to taste
Instructions
  1. Slice Eggo waffles into squares, place Eggo waffle squares in 9 by 13 greased baking dish. In a medium bowl mix 8 eggs, ¾ cup milk, salt and pepper to taste. Add ¼ cup sliced green onions, 1 cup Cheddar cheese, 6 slices precooked chopped bacon, and ½ cup precooked sausage to the egg mixture. Stir ingredients together and pour over the Eggo waffle squares, top with additional cheese. Bake at 350 degrees for 25 minutes.

 

You can also make this casserole the day or night before you are going to eat it and refrigerate it.  If you have a busy morning you can pop it in the oven while you are getting ready.

This Tasty Savory Eggo® casserole was a hit with the kids and they really enjoyed coloring and working on the activity placemats while they ate breakfast.  I am glad that I can help fuel my kids minds and bodies with Eggo® and Crayola  while we get ready for school each morning.

    I’m finding that my kids need more for breakfast, too! I love the idea of this casserole as a good, hearty breakfast AND that you can make it with Eggo Waffles.
