You are probably looking at this picture thinking it looks a lot like a strawberry shortcake!  Well folks this is not your average shortcake.  You see I am not a huge fan of light and airy cakes.  Angle food cake is ok, but not my favorite!  I prefer a dense rich cake.  For this recipe I have adapted a regular white cake mix into a divine heavy delicious cake and topped it with my own homemade strawberry glaze topping. Then added whipped cream and a mix of fresh strawberries, blackberries and raspberries!  Get ready to enjoy this little piece of heaven in your mouth!

 

Let get ready to cook! Gather your ingredients: 1 box white cake mix, 1 large box vanilla pudding, 4 eggs, 1/2 cup oil, 1/2 cup sour cream, 2 cups of water, 1 lb strawberries, 1 package blackberries, 1 package raspberries, 1 Cup of sugar, 4 tablespoons of cornstarch  and 1 container cool whip.  Start by making your cake, mix together cake mix, vanilla pudding, 4 eggs, 1/2 cup oil, 1/2 cup sour cream and 1 cup of water.  Beat with hand mixer until batter is smooth, pour into greased 9 by 13 baking dish.  Bake at 350 degrees for 40 minutes or until toothpick comes out clean.

While the cake is baking start making your strawberry glaze.  Add  1 cup of water and 1 cup of sugar to a large sauce pan and bring to a boil, add 1 cup of sliced strawberries to the boiling water and sugar mixture. Reduce heat and simmer for 10 minutes or until strawberries break down into mixture.  Add 4 tablespoons of cornstarch to 4 tablespoons of water then add the cornstarch water mixture to the strawberry glaze and whisk it over medium heat until the glaze begins to thicken.  Remove the glaze from heat and let cool.

Ingredients
  • For Cake
  • 1 box white cake mix
  • 1 large box vanilla pudding

  • For Glaze
  • 1 cup water
  • 1 cup sugar
  • 1 cup sliced strawberries
  • 4 tablespoons cornstarch
  • 4 tablespoons water
Instructions
  1. For cake
  2. Mix all ingredients with a hand mixer until batter is smooth. Pour batter into a greased 9 by 13 baking dish. Bake at 350 degrees for 40 minutes or until toothpick inserted in center comes out clean.
  3. For Strawberry glaze
  4. Add sugar and water to a large sauce pan stir and bring to a boil. Add sliced strawberries to boiling water sugar mixture, reduce heat and simmer for 10 minutes or until strawberries begin to break down into mixture. Mix cornstarch and remaining water together and pour into strawberry glaze, whisk until glaze starts to thicken then remove from heat.
  5. Slice cake into squares and place on serving plates. Top with strawberry glaze, cool whip and fresh berries.

Slice your cake into squares and place onto serving plates, top with the strawberry glaze, cool whip and fresh berries! enjoy this heaven sent treat. I like to eat mine hot out of the oven, it just melts into your mouth!
