Zucchini Nut Bread

I have Zucchini growing like crazy and have pulled over 30 zucchini’s from my garden just off of two plants! Here is my all time favorite recipe for Zucchini bread.

A recipe that has been in the family for years! I have made this same recipe for 16 years!
Ingredients
  • 3 eggs
  • 2 c. sugar
  • 2 c. grated unpeeled zucchini
  • 3 c. flour
  • ½ t. baking powder
  • 1 t. salt
  • 1 c. vegetable oil
  • 2 T. grated orange peel
  • 2 t. vanilla
  • 1 t. soda
  • 2 t. cinnamon
  • ½ c. walnuts
  • 2 t. nutmeg
Instructions
  1. Beat eggs, add oil, sugar, shredded zucchini and vanilla. mix well then add all dry ingredients
  2. once mixed add in orange peel and nuts.
  3. Bake at 325 degrees F. for 45 minutes to an hour.
  4. Makes two loaves.
  5. I grease and flour my bread pans so the loaves slide out easier.
